Running late and not wanting to eat dinner at 10pm, I had to improvise on the baked potatoes I planned on making. I ended up cubing them and sautéing them in ghee, adding sliced red onion, chick peas, minced garlic and ginger. Pushing everything to the sides of the pan, I toasted garam masala, curry powder, cumin, and turmeric in the center, then stirred to combine. I let the whole pot simmer down with water and stock, and added cut green beans, mustard seeds and peas towards the end (and salt and sriracha to taste). Let’s call it Indian Stew with greek yogurt. Not bad for a 30 minute dinner!
